This recipe mostly comes from my Grandma or my Mama as I and everyone in our family called her.   This is Mama's easy to make homemade old southern banana pudding dessert and I covered it in a beautiful toasted meringue. Most people today cover their banana pudding with cool whip. I was guilty of that myself. It is the easy way out in making a banana pudding. Only making a toasted meringue really is EASY.

She raised me for most of my young life as my mother passed away at a young age.   Most people today when they make a banana pudding cover it with whipped cream topping.  When i was growing up my Mama would always make a toasted meringue to cover the banana pudding.  Mama's pudding always included a lot of vanilla wafers and I loved the cookies after they sat in the pudding for a day or so.

This is where I tossed in some changes to my Mama's banana pudding.   I used Almond cookies & 1 bag of "Animal Crackers".  Both of which I purchased at our local Dollar Tree store.  The Almond cookies are Big, with a capital B and the animal crackers have about the same taste of the vanilla wafers, but are cooler looking.   I then used Almond milk in place of regular milk.  I started drinking Almond milk a couple years ago.   It is good for you, last longer in the fridge than regular milk and taste delicious.

I noticed something really dumb and weird on most big named chefs banana pudding recipes.  They say use 'French vanilla pudding mix to make a banana pudding???   IT IS A BANANA PUDDING.   Not a French banana pudding for crying out LOUD~~~!!!   I used 2 boxes of banana cream pudding mix to make MY banana pudding for the birthday party this weekend.   I made a extra large pudding and doubled the Ingredients below.

My final step was making the toasted meringue.  Making a meringue is EASY folks.  My first time I was nervous and a bit scared that I would mess it up, but it was so easy and made my Baked Alaska look every bit as good as any that I have had in any restaurant.  I used my kitchen torch to toast the meringue rather than try to toast it under my broiler.   If I can do this so can you!

We just had our Sunday family birthday dinner and then Mama's banana pudding with the meringue topping.   It was so dog gone good and I am so dog gone FULL..

Ingredients
1 (12-oz) container frozen whipped topping, thawed, or equal amount sweetened whipped cream
1 (14-oz) can sweetened condensed milk
1 (8-oz) package cream  cheese, softened
2 cups Almond milk
1 (5-oz) box instant Banana pudding mix
6 to 8 bananas, sliced
2 bags Almond cookies & 1 bag of "Animal Crackers".  I used 1 1/2 bag for a very big banana pudding.   I double the above ingredients for a birthday party and family dinner.

Directions
Line the bottom of a 13x9x2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer.   Using another bowl, combine the cream cheese and condensed milk together and mix until smooth.    Fold the whipped topping into the cream cheese mixture.    Add the cream cheese mixture to the pudding mixture and stir until well blended.   Pour the mixture over the cookies and bananas and cover with the remaining cookies.    Refrigerate until ready to serve.

Meringue / Double below for thick meringue
3 large egg whites
¾ cup granulated sugar
1 tsp vanilla extract
Making Toasted Meringue.   You need 3 large egg whites.   I found using a knife to crack open the eggs, the putting the egg in my hand the best/easiest way to separate the egg white into a bowl.  Gently roll the egg around to allow the egg white to slip between your fingers into a bowl. Then dispose of the yoke or better yet used them.

Over a pot of water on your stove you need to warm up the mix of 3 large egg whites & ¾ cup granulated sugar, Whisking steadily until the sugar begins to melt.   Add the vanilla extract for flavor.   Pour all this in your mixing bowl.   Use your mixer on high speed to whip up the meringue. It may take 5 minutes or so.   Keep mixing until you are able to create in your bowl a peak with your meringue.
